Moms Tortilla Soup

Do you remember that special dish your mom used to make for you when you were a kid?  The one that tasted like home and made you feel all warm and fuzzy inside?  For me, that was tortilla soup!  Mom made it a little different than traditional tortilla soup but it still tasted like perfection.  Even now, she still makes it and tries to teach the recipe though I can never seem to make it taste like hers.  I thought I would honor her and her recipe by sharing it with the world, and here it is:
 
 

 

Ingredients :
 

2 TBS OIL- FOR CHICKEN

1/4-1/2  CUP OF OIL FOR THE TORTILLA CHIPS

¼ CUPS DICED ONION

2 CLOVES GARLIC

2-3 LARGE BONELESS CHICKEN BREASTS

4 CUPS CHICKEN BROTH

2 CUPS WATER

1 LARGE (OR 2 REG)CAN STEWED TOMATOES

1 -2 TBS CHOPPED CILANTRO LEAVES

2 CORN TORTILLAS – SLICED AND CHOPPED INTO MINIMAL SIZED PIECES OR

STRIPS (THE SMALLER THEY ARE THE BETTER THEY COOK DOWN TO THICKEN

THE SOUP) FOR NO CARB VERSION, ELIMINATE TORTILLAS IN BROTH

1 CAN BLACK BEANS

1-2 CUPS OF PEELED, CHOPPED GREEN CHILI

SALT TO TASTE

 
TWO WAYS TO PREPARE:

 

1. IN A CROCK POT - ADD ALL INGREDIENTS EXCEPT FOR BEANS AND CHILI (ADD

THOSE AT THE END OR THEY WILL COOK AWAY).

 

2. ON THE STOVE TOP – IN A STOCK POT

-COOK CHICKEN BREASTS IN OIL WITH GARLIC AND DICED ONIONS, UNTIL ALMOST 

  DONE.

-ADD BROTH, WATER, TOMATOES, CILANTRO AND CORN TORTILLAS (IF YOU

 CHOOSE).

-BOIL UNTIL CHICKEN CAN EASILY BE PULLED APART INTO THE SOUP AND TORTILLAS

 HAVE BROKEN DOWN.

-ADD CHILI AND BLACK BEANS.

 
TOPPINGS:

 

-TOPPINGS SHOULD BE ADDED TO THE TOP OF YOUR BOWL OF SOUP, ADD TO TASTE

-FRIED OR BAKED TORTILLA STRIPS: SLICE AND FRY IN OIL, OR BAKE ON A COOKIE 

  SHEET WITH A SPRINKLE OF OIL. ADD SALT TO TASTE ( THE FINER THE SLICES THE

  BETTER )

-AVOCADO SLICES

-SOUR CREAM DOLLOP

-SHREDDED CHEDDAR CHEESE

-CHOPPED CILANTRO

-SLICE OF LIME

-JALAPENO SLICES
